Quorn Vegan Jollof Rice

Ingredients

  • 280g Quorn Vegan Pieces
  • 400g basmati rice
  • 5 tbsp olive oil
  • 1 onion, diced
  • 2 tsp salt
  • 4 tbsp jollof spice mix (equal parts ginger, garlic, chilli, thyme, cinnamon, nutmeg, coriander, salt and pepper)

Method

  1. Soak rice and strain 3 times until water runs clears
  2. Put a large lidded pan on a high heat and sauté onion in oil for a few minutes until the onion begins to brown
  3. Turn heat to low and add jollof spice mix and a splash of water to deglaze pan
  4. Add the rice and Quorn Vegan Pieces to pan and stir
  5. Add 1200ml of boiling water to pan and continue to simmer for around 10 minutes until water has absorbed
  6. Cover the pan with lid and turn off heat and leave for 15 minutes. Serve with lime pickle
