Quorn Vegan Jollof Rice

Ingredients
- 280g Quorn Vegan Pieces
- 400g basmati rice
- 5 tbsp olive oil
- 1 onion, diced
- 2 tsp salt
- 4 tbsp jollof spice mix (equal parts ginger, garlic, chilli, thyme, cinnamon, nutmeg, coriander, salt and pepper)
Method
- Soak rice and strain 3 times until water runs clears
- Put a large lidded pan on a high heat and sauté onion in oil for a few minutes until the onion begins to brown
- Turn heat to low and add jollof spice mix and a splash of water to deglaze pan
- Add the rice and Quorn Vegan Pieces to pan and stir
- Add 1200ml of boiling water to pan and continue to simmer for around 10 minutes until water has absorbed
- Cover the pan with lid and turn off heat and leave for 15 minutes. Serve with lime pickle
