Quorn Pieces & Spinach Pate

Try this quick & easy Quorn Pieces and Spinach Pate recipe. Quorn Pieces, shallots, garlic, white wine, spinach and cream cheese are blitzed together to create this delicious vegetarian pate. Serve simply with slices of chargrilled sundried tomato bread and enjoy!

Ingredients

  • 200g Quorn Pieces, defrosted if using frozen
  • 15g butter
  • 1 shallot, finely diced
  • 1 clove garlic, crushed
  • 100mls sweet/medium white wine
  • 3/4 tsp crushed fennel seeds
  • 1 large handful of spinach
  • 100g low fat cream cheese
  • Salt and pepper seasoning

Method

  1. Pre-heat the butter in a frying pan and gently fry the shallot for 2-3 minutes, or until softened, add the garlic and cook for a further 1 minute
  2. Increase the heat and add the wine then cook until the liquid has reduced by three quarters. Reduce the heat and add the Quorn Pieces and crushed fennel seeds and continue to cook for a further 7 minutes
  3. Blitz all the ingredients from the pan in a food processor along with the spinach and cream cheese, season to taste
  4. Spoon in to ramekins and refrigerate for 1 hour or until needed. Serve at room temperature with slices of chargrilled sundried tomato bread
