Ingredients
- 100g Quorn Roast Mini Fillets
- 200g boiled bulgur
- 1/2 avocado
- 1 can kidney beans
- Salad
- Pickled red onions
- Fresh coriander
For the Roast Beetroot Hummus
- 1 pack of chickpeas
- 2 garlic cloves
- 3 cooked beets
- 4 tablespoons olive oil
- 1 tablespoon tahini
- 1 teaspoon of cumin
- Salt
- Black pepper
- 1 lemon
Method
- Make the hummus by blending chickpeas, garlic, beetroot, olive oil, tahini and cumin to a smooth spread. Seasoning with salt, pepper and lemon juice.
- Slice the Quorn Roast Mini Fillets into strips and add to your bowl along with bulgur wheat, beans, pickled red onion, sliced avocado and beetroot hummus.
- Finish with a sprinkle of fresh coriander.
