Quorn Vegan Nasi Goreng

Ingredients
- 1 cup Quorn Vegan Pieces
- 2 cups long-grain rice
- 1 red onion, finely chopped
- 1 red pepper, finely chopped
- 1 baby courgette, finely chopped
- 1 carrot, finely chopped
- Handful Toasted Cashew Nuts
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- For the sambal:
- 3 red chillis
- 3 garlic cloves
- 1 tbsp tomato puree
- 1 tbsp lemongrass paste
- 2 tbsp sesame oil
- 1 tsp sea salt
- Juice & zest of 1 lemon
- To serve:
- 2-3 spring onions, sliced
- Handful of chopped coriander
- Sesame seeds
Method
- Cook your rice according to the packet instructions
- Add all the sambal ingredients to a blender and blitz until it forms a smooth paste
- Heat a wok over a high heat then add 4 tbsp of the sambal. Cook for a minute or so, stirring often.
- Add the vegetables and Quorn Vegan Pieces & wok fry for 5-6 minutes
- When your rice is cooked, drain away the water and add to the wok. Stir fry for 3-4 minutes. Be sure to scrape the bottom of the pan so the rice doesn’t stick or burn.
- Stir in the soya sauce, brown sugar and cashew nuts. Once the rice is coated in all the flavours, remove off the heat.
- Garnish with spring onions, coriander and sesame seeds and enjoy!
