
Mexican Pizza with Quorn Pieces
Rustle up this fiery pizza with all the flavours of Mexico. Try dusting the Quorn Pieces with a couple of tablespoons of fajita mix for a truly authentic flavour.

Ingredients
- 175g Quorn Pieces
- 200g tin chopped tomatoes
- 2 tbsp tomato pureé
- 1 clove of garlic crushed
- 1 level tsp crushed chilli flakes to taste
- 2 heaped tbsp coriander finely chopped
- 2 x 150g pizza bases
- 1 small red onion thinly sliced
- 1/2 green pepper thinly sliced
- 50g sweetcorn
- 100g monteray jack cheese or cheddar, grated
Method
- Pre-heat the oven to 200°C (400°F) Gas Mark 6
- Mix together the chopped tomatoes, tomato pureé, garlic, crushed chilli flakes and chopped coriander
- Place the 2 pizza bases on a baking tray and spread the tomato mixture evenly over them
- Scatter the Quorn Pieces, red onion slices, green pepper and sweetcorn evenly over both the pizzas and top with the grated cheese. Cook for 15-20 minutes until golden brown
